Easy Peasy Marinated Chicken

Here's a super easy recipe for yummy marinated chicken.

6 frozen chicken breasts.

1 bottle of Italian dressing.

White rice.

Put chicken breasts in freezer bag and pour Italian dressing over chicken. Freeze. When in need for a quick meal, take out bag and run under warm water for 30 seconds to a minute. Throw chicken in slow cooker and let it go all day. Cook on low or high depending on how soon you want it. When you're just about ready to feed your family dinner cook up some white rice and serve with chicken. Easy peasy. :)

Amish Peachy Goodness

It's been a fun/busy/sick week, that's why I haven't been blogging much lately. I've had my hands full, but over all it's been good. Yes, there was an entire night of no sleep with an angry baby waking up every 30 mins, then there was also a strange sleepy girl with sniffles and projectile vomiting. But again, the week has gone surprisingly well, we finally opened up the pickles the girlies & I made a few weeks ago & they were soooooo good!! Again, I made something & was truly terrified to taste it because I was more then certain I would keel over & die.
So I made the girls try it =D
They loved em'! I felt so happy & decided to try it & lo & behold...I loved em' too!!!
So apparently, I can make pickles.
Then I decided to play with the Amish Friendship Bread some. I've had the starter for a while now & although it's good (stupid good) a variation was needed. So I tried out this Chocolate Muffin recipe. Yummy!!
My next plan is to try this Lemon Blueberry recipe...oh happy day. Then I think I'm gonna bake some Cherry Cheesecake =)
And on to my next endeavor...PEACHES!!
See, I've been on this canning kick. Ya know putting "up" your harvest for the winter, that's where the pickle idea came from. I thought how nice it would be to have our own pickles
So, onto peaches, I wanted very much to head out to Michigan & get some peaches but unfortunately I can't just up & run outta state. It appears this household relies on me for meals & silly stuff like that.
Anyway, I figured I'd find a U-pick farm but had trouble with that also so I called a fellow Supermom. Not any Supermom but one who happens to be Queen Of The Internet & knows how to save a buck or two, or ten! Really, this Supermom rocks! If I have ANY questions...about ANYTHING, odds are she can find what I need in record time.
Well, she found me a great deal on Peaches @ 68 cents per pound! A 25 lb box was only 15 bux.
So I went a wee bit overboard & bought 50 lbs...yea I know. Big Daddy isn't so pleased right now, but he will be when he gets cobbler.
Anyway I'm excited, I'm already searching the Internet & finding recipes. I plan to make jam, jellies, & can some in a light syrup. I hope to freeze some as well for smoothies, breads, & pies. Hopefully I don't mess this up otherwise we'll have 50lbs of overly sweet smelling mushy muck.
But I think it'll be alright.
Now my beautiful Bear just had a great idea. We have a pear tree at church which is always dropping pears & they promptly get tossed, we plan to snag em' if they're good. So I suppose we'll be playing with pears next, then apples.
Oh boy don't get me started on apples!!

Easy On Mama =)

Well yesterday was a pretty easy day for this overworked overstressed Mama. I really needed to just chill after all the recent nuttiness. I did get this weeks grocery shopping done with The Monkey & even that was easy on me cuz ALDI was closed for Memorial Day. Although I paid a little more than usual it was worth it, I still kept the bill under 85 bux & for a family of 6, I think that's pretty good =)
We had a good long day visiting with the in laws & as you can see the girlies had 2 tons of fun.







Today I have to catch up on my weeks cooking. I have really grown to like getting everything done I possibly can in one day. Yesterday I did bake a few loaves of bread in the bread machine but aside that not much was done. However, this week is gonna be super easy on me because I'm headed to the ICHE homeschool convention & all the vittles I would normally prepare won't be needed. YAY!!
Tonight, I'm frying up some chicken (can't premake that one)
And tomorrow is a baked ham. That will leave enough leftovers for Big Daddy to make some sammiches for himself & the girlies. And he opted for hot dogs for himself Friday evening, can I just say...WHOO-HOO!!
OK, so what does need to be made?

I'm gonna crank out some Mashed Taters
Fruit Salad
Chocolate Pudding Pie
Kool Aid Pie w/ sweetened condensed milk instead of the evaporated & sugar (TRY THIS!!!!)
Brownies
and maybe Amish Sugar Cookies

The downfall is I have lots of laundry that piled up over the crazy days & that has to get done before convention. Today will be 3-4 loads which means running up & down a gerjillion stairs.

I may look like this by the end of the day.

Kitchen Craziness..yet again!

OK, so I've learned absolutely nothing from last weeks Cooking Frenzy & the Peanut Butter Fiasco
& here I go again with all the running around in the kitchen. Aside from the surprise allergic reaction from the Wee Piglet things went well & I found the rest of my week to go smoother. Since I'll be using the slow cooker a lot this week things will be even easier!! YAY!

So, what's on the docket today?
I'll be making my friend & Supermama Jessica's
Baked French Toast & then on to...

Tuna Salad (Big Daddy Style)
Bread Machine Buttery Rolls
Snickerdoodles
Honey Whole Wheat Bread
2 loaves of Amish Friendship Bread
Bread Machine Honey White Bread (minus C & ginger)
Guacamole
Tortilla Chips
& maybe...BIG FAT MAYBE...some English Muffins

As I said most of this weeks recipes are slow cookin, 5 out of 6 to be exact =)
So there's little to no preparation, YAY-HOO! Since I started late this morning my goal is to have this done...hopefully with fingers crossed, by 4 pm.
Ach! I CAN NOT forget to throw the fish in the crock, remind me OK??
Don't make that face, oh yes you can make tasty fish in the wonderful slow pokey cooker of joy!

Cooking Frenzy

OK, so I've read a lot about freezer cooking & I've always been more than interested. However, I just don't have the space.
What I prefer to do is cook up as much meat as I can & freeze that. So I decided to have a mini freezer cooking day & I figured I'd make up our weeks worth of snax too.
So here's my list of what I'm preparing...

2 batches of World’s Easiest Make-Ahead Marinated Chicken Recipe
Pan of Baked Oatmeal~after cooking, cut into squares & freeze
Brown 1 lb pork, 2 lbs turkey, & a package of Italian Sausage
Boil & shred 5 lbs chicken breast.
All of these previous items will be frozen.

Now, onto the weeks goodies.
I'm gonna whip up some guacamole & fry tortilla chips.
Make the kiddos some jello.
Make a double batch of chocolate chip cookies~bake one & freeze the other.
Bake a loaf of Whole Wheat Honey Bread (maybe two)
And last....my first attempt at homemade doughnuts.

I'm not sure about this last one though, I hope to be done with EVERYTHING by 2 pm. But after all the other cooking I may be all shriveled up & toasty & unable to do anymore.
We'll see...I think I may be a wee bit crazy =)

Maple-Bacon Biscuit Bake...yummmmmm

I am sooooooo making this!! The Hubby is off tomorrow & guess what we're having for breakfast! Or maybe lunch, who knows...could be dinner =)

Homemade "Poptarts"

OK, I came across a recipe for "Homemade Healthy Poptarts" & mentioned how I'd like to give 'em a go. I looked over the recipe & it appeared simple enough, it only called for 5 ingredients so how could I mess this up right??



So we melted the 1 cup of butter & mixed it with
3 1/2 cups whole wheat flour
1 teaspoon sea salt
1 cup plain yogurt

The next step was to "knead the dough just a little bit to make it nice and workable"



So that's what we did, however the dough doesn't look like regular dough, at least not to me it did. Instead it's quite flaky & annoying. Far from workable, I really fought with this stuff....but we eventually got it rolled out on the table & covered with flour.





Then we took a pizza cutter & cut out pop tart sized "rectangles" mmmmm...right. They were shaped interestingly to say the least. Then we added about a 1/2 teaspoon of jelly on 1/2 of the dough rectangles, really...this is what the recipe calls for. 1/2 teaspoon, well, lemme just tell you that as a kid I liked the jelly gooing out the sides. With a 1/2 teaspoon there's no goo *sigh*
So, I would say bump it up a bit if you're like me & the jelly needs to jump up & say "hi!"
Oh, & make sure to spread the jelly around, leaving the edges free so it doesn't all out explode.



Match up the bad boys according to size & use a fork to pinch the edges shut. Then have your adorable kid put in a single layer on a baking sheet. Bake in a 350° oven for about 25 minutes or until the crust is lightly browned.

Then watch said kid thoroughly enjoy her pop tart creation!!

Snow "Ice Cream"

Wow, this was seriously fun! I've heard of snow ice cream before & I had this image in my mind of snow cones but this stuff is way better!!

It was super easy too! It simply calls for...
6 quarts of FRESH snow (fluffy, don't pack it)

1 tsp of vanilla
1 & 1/2 to 2 cups of sugar (to taste)
1 quart of Heavy whipping cream or half & half

We only had 3 & 1/2 cups cream & the remainder was half & half. It worked just fine. So all ya do is mix all ingredients minus the snow. Get it all good & swirly then start adding the snow 2 cups at a time, mixing as you go.



Now, this isn't standard ice cream, it's even creamier than soft serve but it's very good. You can adjust the sugar to your taste & I would imagine you can have all sorts of fun with toppings. The Monkey added some M&M's =)


We ate some up right away, & it received rave reviews!!




Even the Munchkin approved.



The rest went in the freezer til the next day. It froze up real nice & had a texture I was used to. Whether you have it right away or wait a day it's very good.

Butter, Syrup, Whipped Cream...OH MY!!

Whew! Me & the girlies have some seriously sore arms & huge muscles now. We made butter!!
OK, it wasn't all too hard, but a lil more work than I thought. Probably cuz we made a whole cup of butter & another cup of whipped cream.

Yes...oh so yummy!!

So here's how we did it....
We started off with a simple carton of heavy whipping cream, here are my wonderfully gorgeous models showing it off. Aren't they beautiful!!



Then the Bear started whipping. Honestly we whipped the daylights out of this cream & we were getting a whole lot of NOTHING...


Poor baby. However, she wasn't upset, in fact she was tickled at the idea of making this yummy topping. After a while of getting nowhere we couldn't figure out what was wrong so I called my SuperSister who suggested we use a chilled metal bowl.



The Monkey gave it a whirl & lo & behold...NOTHING!!
Ha! Just kidding, it just wasn't happening fast enough for my girlies so Mama had to take over. Once it started to thicken up they naturally became interested again & promptly took over =)
We added some vanilla & sugar & ran a few taste tests. It passed!!



Then came the butter. OK, maybe we shouldn't of tried to make as much as we did. We started off with 2 cups of heavy whipping cream in a jar then shook the daylights out of it.





Honestly, this part was hysterical! Watching the girls shakin & shakin! Well, you can imagine that it didn't take all too long before they decided that I should do it! Well, I didn't let em' get off that easy & we all took turns, however~my turns were two to three times longer than theirs. Finally, we started rolling it across the floor to one another & VOILA! BUTTER!!!
So we got all excited & tasted it, then decided it was gross & added a wee bit of salt...PERFECT!

I was able to explain to the girls how the forced air from the mixer whipped the cream into a fluffy consistency. However, when we didn't add air by keeping the cream in a jar the consistency of the cream was different. The fat particles in the cream began to "stick" together making butter =)

With all this homemade yummy goodness we decided to make waffles for dinner! The Hubby cooked up some bacon & Monkey even helped make some vanilla syrup. It was an awesome time with my sweet girls & we all enjoyed breakfast for dinner =)

Homemade Healthy Poptarts

I just told The Hubby I'd make some snacks...I got online because I wanted to make up some granola & can't find my recipe =(
However, I did find this recipe for Homemade Pop-Tarts & they look sooooo yummy..



And the awesome bonus is that they are healthy! I think me & the kiddos are gonna try this one soon =)

Cinnamon Buns!!

OK, I've made Cinnamon Buns before & they were good...at least I thought they were good. Until I tasted these.



There are no words to describe the wonderful goodness that happens when you bite into this sugary delight.
Honestly, if God made Cinnamon Buns this would be it. I think it's quite possible angels are singing about how good these are. OK, don't get all ruffled...I know they don't sing about Cinnamon Buns....but really these are sooooooo good.
Be forewarned, they are quite sweet & I couldn't personally handle more than one.
Another warning, you're husband will adore you & may very well call up his mother & brag. Lastly, your kids will likely bounce haphazardly off the walls for several hours. That being said....make these rolls!!!! They are stupid good* & even better the next day!!
